No Bake Matcha Protein Bars
Start the year off right with these easy-to-make vegan and gluten-free Matcha Protein Bars! Delicious and nutritious, these bars are the perfect way to get more protein and antioxidants into your daily diet. This fantastic recipe is by our friend Carla Riley of Keep Kitchens.
Prep time: 30-40 mins (including freezing time)
Servings: 10-12 bars
Ingredients to Blend:
- 1 Tablespoon Genuine Tea Matcha Powder
- 8 Soft Dates
- ½ Cup water
- 4 Tablespoons Lemon juice (½ of a lemon)
- ½ Tablespoon Coconut Oil (liquid or melted)
- ½ Cup Protein Powder of choice
- 1 Cup Almond Flour
- ½ Cup Quinoa Flakes
- ½ Cup Kasha
- ½ Coconut Flakes
Preparation:
- Add the following ingredients to blender in this order: water, lemon juice, dates, coconut oil, protein powder, matcha powder
- Blend until well combined into a smooth syrup.
- Add dry ingredients into a separate bowl and mix in wet ingredients
- Combine well and add to a square pan lined with parchment paper. Ensure that the mixture is evenly pressed down
- Freeze for 20-30 minutes to help set
- Cut into bars and keep in fridge
