Pu'Erh teas are oxidized and wet-piled causing them to undergo bacterial fermentation. The tea is exposed to humidity in a process known as "wo dui" during which a bacterial colony forms within the piled leaves. For this reason, Pu'Erh teas are said to have probiotic properties. The liquor is a very deep dark red, and has a nice warm, peaty texture with zero astringency. Truly a unique style of tea.
