  • 1 ¾ cups (220g) all-purpose flour
  • 1 tablespoon (7g) Kato Matcha Summer Harvest powder

  • 1 cup (225g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 4 large eggs, room temperature
  • 2 tablespoons (30ml) lemon juice
  • 1 tablespoon (15ml) lemon zest
  • ½ cup (120ml) sour cream or Greek yogurt

Instructions

1. Prepare for Baking: Preheat your oven to 325°F (165°C). Grease and flour a 9x5 inch loaf pan.

2. Dry Ingredients: Sift together the flour, Kato Matcha Summer Harvest powder, baking powder, and salt in a bowl.

3. Cream Butter and Sugar: In a separate large bowl, beat the butter and sugar until light and fluffy. This should take about 3-4 minutes.

4. Add Eggs: Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Stir in the lemon juice and zest.

5. Combine Mixtures: Alternately add the dry ingredients and sour cream (or Greek yogurt) to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.

6. Bake the Cake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

7. Cooling: Let the cake cool in the pan for 15 minutes, then remove it from the pan and let it cool completely on a wire rack.
