Consisting of two young leaves and one bud, this Imperial White Peony grows at 800m in Fuding, Fujian Province. Known as the Fuding Da Bai cultivar, this tea has a much bolder flavour than the revered Silver Needle. With notes of grass, peach and chamomile, this tea is very easy drinking and has a pleasant sweet finish.
White teas are the least processed of all the tea types as they are simply plucked and withered in natural sunlight then they are briefly piled and then baked to ensure that the moisture is removed to prevent any further oxidation and enzyme activity.
