Also known as Dong Ding Oolong, this phenomenal baked tea grows at about 1000m on Dong Ding mountain in the Deer Valley of Nantou County. The mountain and surrounding area see intense sunshine in the mornings but then cooler mist as the day goes on. This meteorological phenomenon creates the ideal climate for the Chin Xing cultivar which does not thrive under too much heat.
The plucking is carried out by hand and the top 3 or 4 leaves including the bud are plucked. Generally, there are 4 main harvests throughout the year that correspond with the seasons.
After harvest, the leaves are withered and then tossed in bamboo trays to agitate the leaves and begin the oxidation process. After the leaves are oxidized to around 40%, they are baked at very high heat and then rolled and compressed into balls using a large cloth.
The baking and compression process creates a very densely rolled Oolong and a very unique, mellow and smooth flavour. Dong Ding Oolong has a strong, full-bodied floral profile with little tannins.
